Cherry Cordial Mini Cupcakes

These delicious cherry cordial mini cupcakes are a tasty reminder of the classic chocolate cherry cordial candy. We had this taste tested by my husband’s office co-workers. Everyone really enjoyed them!

Chocolate Cake Ingredients

  • 2 cups white sugar
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Directions

  1. Preheat oven to 350 degrees F
  2. Place mini cupcake liners in the mini cupcake tin.
  3. In a large mixing bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water. Batter will be thin. Pour evenly into mini cupcake liners.
  4. Bake 15 – 20 minutes in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely.

Maraschino Cherry Buttercream Icing

INGREDIENTS:

  • 3 cups Powdered Sugar (add more as needed)
  • 1 cup Butter (Softened Un-Salted Sweet Cream)
  • 2 teaspoons Vanilla
  • 1/2 jar of Maraschino Cherry Juice

DIRECTIONS:

  1. Add softened butter and vanilla to the mixing bowl and mix until completely combined.
  2. Add Powdered Sugar and beat on low until it is well mixed. Then move mixer up to medium-high speed. Scrape sides and bottom of bowl often. When completely mixed the frosting may appear dry.
  3. Add cherry juice a little bit at a time. (You May use more or less in frosting for your personal taste
  4. Add additional powdered sugar if needed to achieve the perfect consistency.

Put that special touch on your Cherry Cordial Mini Cupcakes!

You can use a piping bag or a mini ice cream scoop to place icing on the mini cupcakes. Top with maraschino cherries (or a candy heart) and chill in refrigerator for 30 minutes.

Cherry Cordial Mini Cupcakes

I put the cake batter in a condiment sauce bottle to make filling up the mini cupcake liners easier and with much less mess.
